النظام الغذائي بالمغرب الإسلامي من القرن السادس الهجري إلى القرن التاسع الهجري (12م-15م)

Abstract

الملخص (بالعربية) : هذه محاولة اقتراب تاريخية أردنا من خلالها الوقوف على مميزات وحالات النظام الغذائي بالمغرب الإسلامي من القرن السادس الهجري إلى القرن التاسع الهجري (12م ـــــــ15م ). وقد تتبعنا أحوال هذا النظام وكانت سبلنا في تحقيق ذلك استثمار ما وجدناه كشذرات وإشارات مبعثرة في ما وقع بين أيدينا من مصادر ومراجع. ورغم الشح حول هذا الموضوع إلا أننا استطعنا رصد بعض النظم الغذائية التي سادت حياة مختلف شرائح ساكنة بلاد المغرب الإسلامي وكذا الإمكانات المتوفرة لديها والمساعدة على توفير القدر الكافي للغذاء ومقدرة السكان على تنويعه وتحصيله، والظروف البيئية المتحكمة في هذا التنوع، و تكيُّف السكان مع مختلف الظروف والحالات المعتادة والعصيبة ومن دون تجاوز ما جادت به قرائح ساكنة هذه البلاد في فن الطبخ ونظم الغذاء. الكلمات المفتاحية : المغرب الإسلامي، النظام الغذائي، الوفرة الغذائية، الأشربة، الأطعمة. ---------------------------------------------- Résumé (en Français) : Cette thèse représente une approche historique consacrée aux differents statuts caractérisant le systeme alimentaire au Maghreb islamique du XIIème au XVème siècle. Notre recherche a été menée sur ce dit système en exploitant ce que nous avons trouvé comme ecrits dispersés et enfouis dans les manuscrits et les travaux traitant ce sujet. Et malgré la pauvreté des ouvrages historiques en la matière, nous avons pu déterminer quelques systèmes alimentaires qu’a connus les différentes classes sociales du Magheb islamique ainsi que leur adaptation vis-à-vis des nouvelles circonstances, sans oublier ce que ces classes ont innové dans l’art de cuisine et d’alimentation.

This thesis represents a historical approach devoted to the different statuses characterizing the food system in the Islamic Maghreb from the 12th to the 15th century. our research was carried out on this said system by exploiting what we found as scattered and buried writings in the manuscripts and works dealing with this subject. And despite the paucity of historical works on the subject, we were able to determine some food systems known to the different social classes of the Islamic Magheb as well as their adaptation to new circumstances, Without forgetting what these classes have innovated in the art of cooking and eating.
